Our cheeses are fabulous. The truth is in the taste. You don’t have to know much about curds and rinds to visit. We can supply samples to help you along. Everything is cut to order, so you can choose how much or how little you want.
We concentrate on the cheeses of France, Spain and Italy. We also include a selection of Dutch Goudas and Swiss cheeses (not all with holes), and always find room for a funky cheddar or two from the UK or Ireland. We stock some local fare and have offerings from around the country. We are raw milk enthusiasts! We love the proud and pretty pyramids of ashed goat’s milk cheese, and the sultry sleepy sheep’s milk cheeses from the Basques lands which smell like wet wool in winter, as well as all the little oozy French things. Did I mention the Blues and their moody wandering veins?
We have a small, but well chosen community of cured meats, including La Quercia’s Speck from distant Iowa, Fra’Mani Salumi from Northern California, and Jamon Serrano from Spain. Speaking of Spain, we have some unique aged sherry vinegars and wonderfully nutty arbequina olive oils. But, wait till you see our superb array of tinned Spanish seafood lovingly packed in extra virgin olive oil. Come.

Ionah DeFreitas and Hugh O’Neill have been here from the start. That was in 2001.
We used to own the restaurant “Hugh’s New American Bistro” here in Denver. It ran for eight years. I (Hugh) was the chef. Ionah made desserts in the morning, chose wines in the afternoon, and worked crowd control in the evenings. It was a small place. Really pretty. We made some great food there. Previous to that, I had a restaurant called “Greens Cafe” over by the capitol building, a funky little joint that people still remember.
Everybody stresses the importance of a good location, so we thought we’d tell you where we are. We are on the north-west corner of 32nd and Lowell Boulevard.
Well… we’re not exactly on the corner, that would be where Mondo Vino, Dewey’s wonderful wine shop is located. Speaking of wine, if you’d like to bring in a bottle or two, we would be delighted to make suggestions for cheese and wine pairings.
A mere two block stroll down the street is The Denver Bread Company; they deliver us our daily fresh bread. The loaves are long and thin, sometimes crusty, sometimes soft, a bit like Greg the baker himself.
If you look closely at our founder, St Kilian, a huge cheese lover himself — you will notice that as he poses for his picture, he clutches within his person all three elements of the holy trinity of food — cheese, bread and wine. We think he’d like our neighborhood
